Remember how back in the day you’d see a head of cauliflower, and think, poor cauliflower?
I almost felt sorry it, the way it drooped and flopped after being boiled within an inch of its life then covered with a blanket of melted processed cheese.
Kitchens of yore were not always kind to cauliflower.
But now? Now cauliflower is everywhere: roasted, toasted, tossed, turned into pasta, pizza crust, even “steak.”
You could make the case cauliflower is the IT vegetable of the ‘20s.
I’m hoping something similar happens with lima beans (aka butter beans).
I want to see these beans get their day in the sun. And, yes, I might be a giant nerd.
The other night I made a lima bean recipe from Jenny Rosenstrach’s The Weekday Vegetarians. It’s very similar to her version from 2021 here.
My girls and I loved it!
The key was finishing the beans with fresh lemon juice and jarred pesto.
